ORGANIC VEGETABLES

The certified organic vegetables with which the Osteria prepares its dishes come from Azienda Agricola Bio Colombini Agri-Cultura Biologica in Crespina (Pisa).
Here, tradition and innovation have been melting together for four generations, thanks to the use of sustainable farming methods in full respect of the rhythms of nature and man.
For “Bio Colombini” making organic agricultur is not just avoid the use of harmful practices in favor of the natural processes, but also support a productive and social system leading to an improved quality of life, to promote the area and the human labor.
Thanks to the creation of a network of public and privates entities, including the University of Pisa, the company also made significant projects of “social farming” as Orti ETICI, Horticulture, Economic Technical and Innovative social inclusion, aimed at providing ortho-therapeutic employment in the area of Valdera for socially disadvantaged people.
Pitti & Friends is also careful to use seasonal vegetables: together with kilometer zero, the seasonality of products is an additional guarantee for the quality of the dishes we offer. Eating seasonal vegetables not only helps the environment, avoiding the use of intensive cultures and high energy expenditure, but also the health, benefiting the most of the nutritional values, important to prevent diseases of the season and to better face the climate period.
