SAFFRON AT KM 0

The saffron which enriches our risotto is cultivated in the farm Patricelli from Guasticce (Livorno).
The saffron, commonly called the “red gold “, is a spice derived from the pistils of the Crocus sativus.
The gathering takes place at dawn when the flower is still closed to preserve all the organoleptic properties. Subsequently the flowers are transported to the laboratory in order to separate the pistils, and drying them at a controlled temperature.
All phases of production are carried out by hand with infinite care in order to obtain a top quality product. It has a strong antioxidant power, it protects cells from aging and free radicals, it helps to strengthen the immune system and the prevention of pathologies affecting sight.
